Luckily for those of us who are interested in history, U.S. copyright laws are such that any texts published in the United States prior to 1923 are now in the public domain, and can be copied, re-used, and otherwise propagated without permission or penalty. Because of this, we are able to present you with this collection of historical chocolate recipes. Please note, these recipes are as close to the originals as possible, and so may look strange to the modern eye. Therefore, if you plan to make any of these old-fashioned delights, make sure you read the recipe thoroughly before beginning--some of them leave out information like oven temperature, cooking time, or even ingredients that are later called for in the instructions!
