In the past few decades, the news has been full of information about the relationship between chocolate consumption and health. First we were told that chocolate was unhealthy--an indulgence to be enjoyed sparingly. More recently, studies have shown that chocolate, while still high in calories and fat, has some significant health benefits as well. Many very healthy people are now incorporating small amounts of dark chocolate into their daily diets, and are able to feel good about doing so. Chocolate companies are thrilled, of course, and have started doing significant amounts of research on how to formulate products that taste good and can make claims to improve health.
